Twenty years ago, a small specialty foods company in Fredericksburg, Texas, paired a favorite berry with a then-unknown form of dried-smoked jalapeno called the chipotle—and the rest is history. The Sauce celebrates this award-winning marriage made in flavor heaven with insights into the story from Case Fischer and Mark Wieser, the founders of Fischer & Wieser Specialty Foods, plus about 80 recipes created by cookbook author John DeMers and culinary instructor Nancy Marr. Recipes range from the company’s original suggested use—the sauce simply poured atop cream cheese—to more surprising options like Salmon Quesadillas, Pork Chop Piperade and Molten Chocolate Cake.
