French winemaker Joly explains how he uses the principles and practices of biodynamics to grow his grapes and make his Savennieres, which is "among most distinctive wines today" (Wine Spectator). Biodynamics was discovered, some say invented, by Rudolph Steiner, and involves electricity, rays, shapes, dung, and other aids overlooked by conventional and organic agriculture.
